As the world’s population continues to grow exponentially, so too does society’s demand for meat. But the expansion of the global meat-industrial complex comes at a dire price. Between the acceleration of climate change, the clear-cutting of forests, and the inhumane treatment of animals, the way the world consumes meat is no longer ethical or sustainable. So what’s a world with an insatiable taste for meat to do? One surprising solution offered up in recent years is the concept of cell-based meat—meat that does not come from an animal on a farm, but from cells in a laboratory—eliminating land usage, greenhouse gas emissions, and animal suffering. At the forefront of this revolutionary movement is cardiologist Dr. Uma Valeti, the co-founder and CEO of Memphis Meats, one of the leading start-ups in the field.
